Balsamic Spinach Chicken

SO EASY!

-Pound 4 chicken breast till 1/2 inch think
-salt & pepper chicken
-cook in olive oil on stove 4-6 minutes- at 5 minutes, add 1/4 cup balsamic vinegar

add:
1 can of diced tomatoes (or fresh tomatoes, I use both)
1 tsp basil (dried or fresh, I use fresh)

-simmer for a few minutes and lay on a bed of fresh spinach
Enjoy!

I have actually made a recipe like this before, but I like yours better because it is easier and tastier with the addition of spinach. I am glad you made it for us!

Also, thanks for trying to help me entertain my tired and uncooperative baby today during sacrament meeting. Enjoy the months you still have that your baby sits still for you, I miss them!
